You’ve read all about Chef Alba in this month’s edible Upcountry magazine: originally from Spain, she now runs The Mediterranean Corner, a catering business and cooking school with direct relationships with local farmers to supply authentic Spanish ingredients. This evening, she’ll be serving Canelones de Carne: delicate pasta rolls filled with pork, beef and chicken, topped with Bechamel and Manchego cheese. This will be accompanied by a Granny Smith apple salad with Valdeon blue cheese and Marcona almonds. $10 a plate, with beer, wine, beverages and dessert also available for purchase from The Chocolate Moose. 6pm until sell out.
